Chicken and Vegetable Soup served with a soft damper

This is a nice winter warmer and is so easy to make with a DREAMPOT. A great example of how you can make more than one recipe at a time in one of these versatile thermal cookers.

The Soup

Cooking time: 20 Minutes, then leave in the DREAMPOT for at least 1 ½ hours

Serves: 6-8

1 Turnip

1 Stick Celery

1 Large potato

1 Large Onion

1 Zucchini

1 Large Carrot

1 Parsnip

1 ½ litres boiling water

1 pkt. Cream of Chicken Soup

Dice all the vegetables into small cubes. Place vegetables into the large inner pot. Pour boiling water over the vegetables. Bring to the boil.

Remove from heat. Mix the soup packets with the cup of cold water thoroughly. Add to the inner pot with the garlic, salt and pepper to taste, sweet corn with juice and chicken pieces. Stir well.

Return to the boil, reduce the heat and gently boil for 10 minutes with the lid on.  Transfer to DREAMPOT for at least 1 ½ hours.

Cooking time: 20 Minutes

Serves: 6-8

2 Cups Self-Rising Flour

Place flour into bowl and then add the water a little at a time stirring well after each time. Repeat this until the flour forms a firm ball. Turn out onto bench knead until smooth. Shape into a flat ball shape. Place in small inner pot.

To cook with soup: Place the small inner pot with lid on, to the top of the large inner pot whilst you bring the vegetables to the boil. Take the small pot off to add the chicken etc to the large inner pot (as per above). Place the smaller pot back on the top and bring the lot back up to the boil. Reduce heat and let simmer for 10 minutes. Transfer to DREAMPOT and let cook for at least 1 ½ hours.

To cook by itself: Bring 2 litres of water to the boil in the large inner pot. Place the small inner pot containing the dough on the top with lid on. Leave it to gently boil for 20 minutes. Transfer to DREAMPOT to cook at least 1 hour.

Cut into slices and serve.
