This is a quick and easy recipe for a yummy treat.
Prep Time: 10 minutes
Cooking time: 15-17 minutes
Puff Pastry (enough to cover the pan you are using)
100g Spreadable Cream Cheese
2 ½ tbsps. Sour Cream
3 handfuls of Baby Spinach Leaves (alternatively use frozen spinach)
150g Smoked Salmon, Chopped
150g Grated Tasty Cheese
Salt & Pepper to taste
Pre-heat oven to 180C
Line Quiche pan with pastry. Using a fork prick the base a few times to stop the pastry rising when cooking.
Spread cream cheese evenly over the base.
Add a layer of spinach on top of cream cheese, then a layer of Smoked Salmon and the juice from the lemon (add capers if desired).
Break eggs into a bowl, add sour cream, salt & pepper and mix well.
Gently pour the egg mix into the quiche, moving the quiche tin around to spread the mix evenly.
Top with grated cheese
Place in oven to cook for 15-17 minutes or until the cheese and pastry are golden brown.
Cool slightly and serve warm.
